Overview
Maramureș's food culture runs on what a household can smoke, cure, or grow itself: home-smoked meats and cheeses are still commonly prepared in family smokehouses, and mămăligă în pături, cornmeal polenta layered like a mille-feuille with sour cream, butter, cheese, and egg, is a distinctly Maramureș take on Romania's national staple.
Horincă, a plum spirit distilled to 52-70% alcohol, is the region's own name for what's called țuică or pălincă elsewhere in Romania, distinguishing it by both its Ukrainian-derived name and its real strength. Offering a small glass of horincă is a traditional welcome, extended before conversation even begins.
