Wallachian Table: Tochitură & Pleșcoi Sausages

Wallachia's rustic table — slow-cooked tochitură, Easter's drob de miel, and Buzău's PGI-protected chilli sausages — built for hearty, unhurried meals.

Overview

Muntenia's cooking is Wallachia's classic table: tochitură, pork cooked slowly in its own fat and juices, then finished with a fried egg, mămăligă, and telemea cheese, is considered the region's signature dish. At Easter, drob de miel, a baked lamb-offal terrine bound with egg and herbs, appears on tables across the region.

Buzău county, in the region's east, gives Muntenia its own EU-protected product: cârnați de Pleșcoi, dry sausages made from mutton (sometimes blended with a little beef) spiced heavily with chilli and garlic, traditionally made in and around Pleșcoi village.
